A summery soup dish featuring ”Peony Pike Conger” coated in kudzu starch, enjoyed with bonito broth layered with the savory flavor of grilled pike conger bones.
Hamo (Pike Conger) Yukibi with Ume Plum Sauce
Awaji Island Hamo (pike conger) lightly blanched from the skin side, and finished in a plump sashimi.
The plum paste soy sauce from Kishu plums enhances the umami.
