Under the supervision of Chef Fushiki, a brewer and inheritor of Japan's fermented food culture, we pursue deep flavors through fermentation and smoking based on the idea of “katsumushou.” We bring out the true power of Awaji Island's rich mountain and sea blessings and deliver dishes that engage all five senses.
