Waho Cuisine
— A Taste of Awaji, the "Land of Imperial Cuisine" —
From ancient times, food was delivered to the Imperial Court
and it is known as “Miketsukuni” (the land of food).
The bounty of the mountains and the sea, along with the seasonal expressions
It has supported and nurtured our lives.
The concept of "Waho" originates from a unique approach to natural wellness,
which utilizes Japan's native materials,
the cyclical change of the four seasons, and traditional wisdom.
We incorporate this spirit of "Wano-Totono-e" (Achieving Japanese Harmony)
into every single dish,
crafted with care using techniques of fermentation and smoking.
With a view of the Seto Inland Sea stretching out before you
Please spend a moment to feel the season of Awaji Island.
Nobuaki Fushiki
Under the supervision of Chef Fushiki, a brewer and inheritor of Japan's fermented food culture, we pursue deep flavors through fermentation and smoking based on the idea of “katsumushou.” We bring out the true power of Awaji Island's rich mountain and sea blessings and deliver dishes that engage all five senses.
